Instagram post 17842405174854463 水煎包 was invented more than 500 years ago. This is one dish you'll need to use your ears to cook. Once you hear the water condensing and hitting the pan, you know your 包 are ready to be dished out. 
The Northerners and Southerners have their own versions. For me, the most memorable ones are from the Northern parts of China, where the quality of the wheat is premium, more glutinous and therefore wheat is the Northerners' staple. I had my fill when I visited 石家庄 earlier this week, so now I am trying to see if I can recreate some!
Taiwan's version is heavenly too, and there is always a long queue to buy one or two in the streets. Those in Chinese restaurants in western countries are for me, too 'rough', gigantic and loaded with MSG. 
As you can see, I am not an expert or consistent in wrapping these 包, and I guess I'll never be an expert because I make them at most once a year. I will get better from the first bao to the last bao in one session but never good enough or consistent enough to look professional, but who cares, as long as they taste good. 😋 Well today, I managed to get them to 20 folds! Instagram post 17855759386634176 Achar with chicken rice balls. Growing up, some stalls still Hainanese chicken rice in rice balls, very much like the onigiri, but rounded. They are the best chicken rice we can get.
These days, they are seldom seen, but nothing we cannot replicate at home. I put the rice into a silicon muffin mold and press. In between, I put a layer of chicken.
In Southeast asia, we also love achar, and chicken rice is sometimes served with achar. The little secret to my achar is the fried dried prawn that I smash in a mortar and then fry briefly. It is heavenly!

But I still purchase sashimi-grade fish and make them. They are always a hit. Here, the barramundi is deboned and half the fish is fried and the other served as a carpaccio. The fish bones are fried to crispy.

If you are brave, the bones are so crispy, they are edible. Otherwise, throw them into a soup or congee and that will make a pot of very umami soup or congee.
