Banana and Cranberry Bread


250g Unsalted butter

180g Brown Caster Sugar (or Raw Caster Sugar)

1 teaspoon nutmeg (ground)

1 teaspoon Vanilla essence

5 eggs

2 bananas, mashed

1/2 cup cranberries, soaked

350g self-raising flour


  1. Preheat oven at 170C.
  2. Cream and butter and sugar until almost white.
  3. Add the nutmeg powder and vanilla essence.
  4. Emulsify eggs one at a time. Add a little flour if there's difficulty.
  5. Add the bananas and mix well.
  6. Pour in the flour and cranberries and mix just enough to even and do not overmix.
  7. Bake for one hour in a middle rack.
