Peach Galette



1 1/3 cup flour

4 Tbsp powdered sugar

¼ cup almond flour

¼ tsp salt

¼ cup butter (chilled)

3 tbsp cold water

½ tsp lemon juice


1 ½ tbsp corn starch

7 tbsp sugar

2 lbs fresh peaches

1 tbsp honey


  1. Cut butter into small cubes and freeze.
  2. Place flour, almond flour, salt, powdered sugar and butter into a bowl and rub in.
  3. Combine using cold water (you may not need all of it)
  4. Set the pastry aside.
  5. Filing
  6. Cut the peaches into slices.
  7. Combine
  8. Preheat oven to 325F.
  9. Place sliced peaches into the galette, and then fold in.
  10. Egg wash.
  11. Bake for about 15 minutes or until galette is golden brown.
  12. Brush with honey.
