Simple Indonesian vegetable curry. Staple of most South East Asians. Added some prawns for extra taste.

Sayur Lodeh


1 medium onion, sliced

2 cloves garlic

1 Red Chili

1 cup cauliflower

1/2 cup long beans

1 cup cabbage

2 carrots

1 brinjal/egg plant

150ml Coconut milk

100ml chicken stock

100g Prawns (peeled)


1 tsp cumin powder

1 tsp tumeric powder

1 tsp coriander powder

1 tsp curry powder (optional)

Salt and pepper to taste


  1. In a pot, fry the onions and garlic until fragrant.
  2. Add the spices.
  3. Add all the vegetables and stir through.
  4. Add the prawns and then the stock.
  5. Simmer until vegetables are all cooked, about 10 minutes.
  6. Add the coconut milk and once boil, remove from heat.
  7. Add salt and pepper to taste.
